I will be teaching Latin to adults in my parish this fall. My bachelor's is in Latin (and chemistry), so I certainly have confidence in my knowledge of and ability to teach the language. Unfortunately, I've been having trouble finding teaching materials appropriate to teach adults (strictly) ecclesiastical Latin.

I would like to keep the classes fun (of course, in my opinion, how could Latin NOT be fun?), but try to ensure that all the necessary information is taught. Additionally, the class will only be able to meet once a week. If I were to use your books, which series would you recommend?

The following page has information on which program to choose: http://www.memoriapress.com/articles/start_latin.html. It appears that you would want to start with Henle's First Year Latin. If so, you'll also want get both of the study guides too.

Henle does not teach specifically ecclesiastical Latin although there is quite a bit of Christian content in the first 100 pages of Henle I. [Henle gives three different pronunciation guides to choose from--Continental, Roman, and Italian (ecclesiastical).] However, there is no other course out there that teaches the grammar and usage concepts of Latin better than Henle. And so, the best way to teach ecclesiastical Latin would be to teach it as outlined by Martin Cothran in http://www.memoriapress.com/articles/summa.html. This method (i.e., teaching Henle Latin I and II* and then Latin Grammar and Second Latin by Scanlon and Scanlon) is as good as you can get at this time.

*It would be possible to omit Henle II since Henle I gives such a good foundation.
